{"id":1483,"date":"2018-10-25T15:00:49","date_gmt":"2018-10-25T15:00:49","guid":{"rendered":"http:\/\/immakulate.com\/?p=1483"},"modified":"2018-10-25T15:32:16","modified_gmt":"2018-10-25T15:32:16","slug":"kansas-city-chili","status":"publish","type":"post","link":"https:\/\/immakulate.com\/main\/kansas-city-chili\/","title":{"rendered":"Kansas City Chili"},"content":{"rendered":"<p>Winter is coming and\u00a0<span class=\"il\">chili<\/span>\u00a0is a great comfort food to warm the body on a cold day.\u00a0 The team at work decided to have a\u00a0<span class=\"il\">chili<\/span>\u00a0contest.\u00a0 This is my second attempt at making\u00a0<span class=\"il\">chili<\/span>. \u00a0 Good\u00a0<span class=\"il\">chili<\/span>\u00a0has spice and heat.\u00a0 My version is midwest meets Texas where there is bite size chunks of tender beef with a thick smooth bite.\u00a0 I won second place at work. Yahoo!!!<\/p>\n<pre><strong>INGREDIENTS:<\/strong><\/pre>\n<pre>2 lbs diced beef chuck\r\n1 lbs ground pork\r\n1 lbs ground beef 85% \r\n2 lbs diced red peppers (or a mixture of red, yellow, and orange) \r\n3 cups chopped onion \r\n3 tbsp ancho chiles powder \r\n2-4 dried arbol chiles (stems and seeds removed) \r\n2 tsp light molasses \r\n2 tbsp cumin (ground) \r\n2 tsp bittersweet chocolate \r\n2 tsp ground coriander \r\n1 tsp dried oregano \r\n2 tsp brown sugar \r\n3 tbsp <span class=\"il\">chili<\/span> powder \r\n1\/2 tsp dried thyme \r\n1 tbsp cinnamon \r\n4 tbsp minced garlic \r\n4 tbsp tomato paste \r\n1 can kidney beans (drained and rinsed) \r\n1 can crushed tomatoes \r\n2 can diced tomatoes \r\n2 cups of chicken broth \r\n\r\n<strong>DIRECTIONS:<\/strong> \r\nDifficult Level: 4 \r\nPreparation time: 45-60 minutes \r\nCook Time: 2-3 hours \r\nTotal Time: \r\n\r\n*<span class=\"il\">Chili<\/span> Paste \/ Powder* \r\n1. Adjust the oven rack to lower-middle position and heat oven to 300 degrees. \r\n2. Toast the ancho and arbol <span class=\"il\">chili<\/span> without the seeds in the oven. \r\n3. Grind the Ancho and arbol <span class=\"il\">chili<\/span> into a paste by adding small amount of water.\r\n4. Add the rest of the dry ingredients and make sure the paste is thick.\r\n*<span class=\"il\">Chili<\/span>* \r\n1. Cook the ground pork with onion, a pinch of garlic, salt, and black pepper.  Drain liquid and pour into crockpot.\r\n2. Cook the ground beef with onion, a pinch of garlic, salt, and black pepper. Drain liquid and pour into crockpot.\r\n3. Pan sear the beef chuck with garlic, salt, and black pepper. Pour into the crockpot.\r\n4. Pour in the wet ingredients and stir evenly.\r\n5. Mix the <span class=\"il\">chili<\/span> with the <span class=\"il\">chili<\/span> paste.\r\n6. Set the crockpot to high and cock for 1.5 hours. Stir the <span class=\"il\">chili<\/span> every so often.\r\n7.
